Popular Leeds sushi chef Chef Fern launches new restaurant at former Old Red Bus Station
A renowned sushi chef is preparing to launch an exciting new venture in Leeds at the start of the new year.
Lattawan Buchanan, better known as Chef Fern, is set to expand her food empire with the launch of Tori Nori, a modern Japanese grill and bar.
Tori Nori, which means ‘chicken’ and ‘seaweed’ in Japanese, will offer a modern take on the Japanese grill and will take over the former Old Red Bus Station on Vicar Lane, which closed in January 2025.

Chef Fern, who also owns Fern Modern Sushi in the Central Arcade in Leeds city centre, has established a strong reputation on the Leeds food scene.
She previously served as the sushi chef at Issho and Sakku before opening her own restaurant.
She has also garnered a formidable online following, with over 60,000 followers on Instagram.
Speaking to the YEP in 2021, the Bangkok-born chef explained where here love for Japanese cooking comes from: “I started cooking when I was at high school, my mum taught me how to cook Thai food and all the techniques.
“And then when I grew up, I used to work in Japan and that’s why I’m interested in Japanese food."
Tori Nori is set to open on Vicar Lane in Leeds city centre in January 2026.
