Karen Wright: Caravan cooking in my fabulous happy place
Its six weeks since we moved home and it has flown by. We haven’t had time to visit our caravan and we really missed popping up every now and then to relax and take in a change of pace.
So we made a snap decision last Sunday morning to go up to the site at Ripon and have a couple of days there.

It is less than an hour’s drive from home so even if I pack things from the freezer they are still frozen when we get there.
It is fabulous to get to my happy place and as the caravan is on a permanent pitch it takes less than five minutes to have everything up and running.
As it was an impromptu visit I had grabbed a few things from the fridge with no real plan in place as to what I would make for our evening meal.
I love to do that anyway, getting creative in the kitchen.
I made a sausage tray bake.
This is what I did:
I par boiled some baby potatoes and then placed them in a baking dish with a chopped up red onion and some frozen sausages.
After drizzling with oil I let it roast in the oven for about twenty minutes before adding red peppers, baby tomatoes and spices.
The spices I used were paprika, garlic powder, oregano and salt and pepper.
This cooked for another twenty minutes before I topped the lot with a tin of chopped tomatoes and some grated cheese.
When it was all bubbling I took it out and topped with chopped spring onions and some fresh dill.
It was a veritable feast and it didn’t create much washing up, I never wash up anyway as it is my husband’s designated task!
The next day we went into Ripon for a potter around the shops and a gentle stroll down to the river.
I find that a couple of days in the caravan helps to restore my energy levels and then I can return home refreshed and invigorated.
Catch up with me next week when I hope to be able to share some very exciting news on the home front which I will bring all the way from London and maybe a celebratory recipe that you can rustle up if you have something to celebrate or you want to add a bit of sparkle to your summer.
